Do you love BLT’s? Of course you do!
Hatch season is underway and I am so stoked! Every year, HEB (the grocery store chain) puts out limited edition hatch pepper…well…everything! The shining star in my opinion: their Hatch Pepper Bacon. It is…divine. Smoky, peppery, salty, bacon-y heaven. So OF COURSE I had to use it to make a BLT. Add some avocado to fully accentuate the Tex-Mex flavor, mayo for some tang, and crispy fried sourdough…*chef’s kiss* Side note: the bacon is amazing in a breakfast sandwich as well!
I chose to deep fry French fries for the side, but this goes just as well with chips or soup (I would go with tortilla soup in that case). So you do you my friends, food that make you happy is the best food.

Ingredients
Mayo – For frying and for the inside
Sourdough Bread
Head of Green Leaf Lettuce
1 Beef Steak Tomato
1 lb Hatch Pepper Bacon
1 Ripe Avocado
Directions
- Pre-heat oven to 350 F if you are baking your bacon. If you are frying on the stovetop, get a large skillet and heat it to medium, medium high.
- If baking your bacon, line two large baking sheets with aluminum foil and lay out your bacon, you’ll bake it for about 30 minutes or until desired doneness, flipping halfway. If frying on the stove, fry until desired doneness.
- While bacon is frying, prep the rest of your ingredients. Slice your tomato, separate and wash your lettuce, pit and slice your avocado, and mayo one side of each piece of bread used. I used one avocado and 1 beefsteak tomato for 3 sandwiches, if you are making more you might want multiple tomatoes and avocados.
- When the bacon is almost done, heat either an electric griddle or another large skillet to fry the bread to medium heat. When heated, place the bread mayo side down keep an eye on it ad it will crisp up quickly. When it is golden brown or desired doneness (we like ours extra crispy), pull them off and put on a cutting board or on the plates that will be used.
- Take mayo and spread the amount you would like on the un-fried side of ONE of the pieces of the sandwich, per sandwich.
- When the bacon is done, place it on a paper towel lined plate and let it cool for at least 2 minutes.
- Construct your sandwiches in whatever order you would like, serve with chips, French fries, or soup.
